In fact, these are not the same animals, although the photos were taken in the same place. The ‘before’ are geese from Egypt, perfect for a Christmas dinner, stuffed with chestnuts and more. The ‘after’ are ducks, best for their liver to make ‘tournedos Rossini’ or prepare ‘foie gras’. My apologies to Vegetarians (which I am).
